Very Vanilla Muffins Recipe

Ingredients
Muffins
- 1 1/2 cup all-purpose flour
- 1 tsp baking powder
- 1/3 cup butter OR margarine, melted
- 1 cup sugar
- 1/2 cup buttermilk
- 2 tsp Pure Vanilla Extract
- 1 cup dried berry OR cherry berry blend
- 2 eggs
- 1/4 tsp salt
Vanilla Streusel
- 2 tbsp butter OR margarine, softened
- 1 tsp Pure Vanilla Extract
- 1/4 cup sugar
- 1/3 cup all-purpose flour
Directions
- Preheat oven to 425F.
- Combine flour, baking powder and salt in a large bowl.
- Mix butter and sugar in a medium size bowl until well blended.
- Add eggs and vanilla extract.
- Stir in buttermilk and dried berry blend.
- Add berry mixture to bowl with flour, stirring just until combined.
- Fill muffin cups 2/3 full.
- To make topping, sprinkle vanilla over sugar and stir to mix.
- Cut in butter and flour to make coarse crumbs.
- Sprinkle over muffin batter.
- Bake for 12 to 15 minutes until muffins are browned and wooden pick inserted in center comes out clean.
