Vanilla Cream and Berry Parfaits

Vanilla Cream and Berry Parfaits

  • Try with a variety of different berries.


  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp salt
  • 2 tsp Pure Vanilla Extract
  • 2 cup heavy cream
  • 3 cup fresh berries
  • Fresh mint, if desired


  1. Combine gelatin and cold water in a small saucepan, mixing well.
  2. Let stand 5 minutes.
  3. Add sugar, milk and salt and gelatin mixture and heat over low heat, stirring until sugar and gelatin have dissolved. Take care not to boil.
  4. Remove from heat.
  5. Refrigerate until cool and the consistency of syrup, about 30 minutes.
  6. Beat cream and vanilla extract in a large bowl with electric mixer until stiff.
  7. Pour gelatin mixture over cream and fold in until well blended.
  8. Layer vanilla cream and berries in glass bowl or pretty glasses.
  9. Chill at least 30 minutes before serving.
