Chocolate Cupcakes with Dulce de Leche Icing Recipe

- 1/2 cup butter
- 1-1/2 cup sugar
- 2 eggs
- 2 cup cake flour
- 1/2 cup cocoa
- 1/2 tsp salt
- 1/4 tsp Ground Cinnamon
- 2 tsp hot water
- 1 cup cold water
- 1 tsp baking soda
- 2 tsp vanilla extract, pure
Icing
- 2 cup powdered sugar
- 1/3 cup dulce de leche
- 1 to 2 tbsp milk
- 1 dash Ground Cinnamon
- 1 tsp vanilla extract, pure
Directions
- Cream butter and sugar with electric mixer until light and creamy colored, about 5 minutes.
- Add eggs, beating well after each.
- Mix flour, cocoa, salt and cinnamon together in a medium bowl.
- Gradually add flour mixture and water to batter, alternating.
- Beat in vanilla extract.
- Combine soda and hot water in a small bowl; fold into batter.
- Portion into cupcake pans lined with liners.
- Bake for 20 to 25 minutes at 350ºF.
- Cool at least 30 minutes.
- Beat all frosting ingredients together in a large bowl until creamy.
- Ice each cupcake.
