What You’ll Need

Ingredients

For the Chicken Skewers:
  • 2 tbsp Greek yogurt
  • 2 tbsp dried oregano
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
For the Rice:
  • 2 tbsp butter
  • 1 ½ cups long-grain rice (like Basmati)
  • 2 tbsp Tone’s® Savory Herb Rice Seasoning
  • 2 ½ cups chicken stock
Toppings:
  • 1 cucumber, diced
  • 7 oz cherry tomatoes, quartered
  • 1 cup tzatziki
  • Fresh parsley (for garnish)

How to Make it?

In a bowl, mix Greek yogurt, oregano, olive oil, lemon juice, smoked paprika, cumin, and salt. Toss in chicken and coat well. Let it marinate while the rice cooks.

Melt butter in a pot over medium heat. Add rice and stir for 3-4 minutes until lightly toasted. Stir in Tone’s® Savory Herb Rice Seasoning. Pour in chicken stock, bring to a boil, then reduce heat, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 10 minutes before fluffing.

Preheat your grill or grill pan to medium high heat. Thread chicken pieces onto skewers. Grill for 15-20 minutes, turning halfway, until golden and slightly charred.

Spoon rice into bowls, top with chicken skewers, diced cucumbers and tomatoes. Drizzle with tzatziki and garnish with parsley. Enjoy!
