What You’ll Need

Ingredients

  • 1 tbsp olive oil
  • 1 lb beef chuck, cut into small cubes
  • Salt and black pepper, to taste
  • ½ small onion, diced
  • 1 clove garlic, minced
  • 2 cups beef broth (or more as needed)
  • ½ cup diced carrots
  • ½ cup diced red bell pepper
  • Chopped parsley, for garnish
For the Savory Herb Rice:
  • 2 cups water
  • 1 cup uncooked white rice
  • 2 tbsp Tone’s® Savory Herb Rice Seasoning (or more to taste)

How to Make it?

Heat olive oil in a large pot over medium-high heat and season beef cubes with salt and pepper. Sear beef until browned on all sides, about 5-7 minutes. Reduce heat to medium, add onion and garlic, sauté until fragrant, about 2 minutes.

Pour in beef broth, bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, stirring occasionally, until the beef is tender. Stir in diced carrots and bell peppers during the last 20 minutes. Taste and adjust seasoning.

Cook the Savory Herb Rice: In a separate pot, bring 2 cups of water to a boil. Stir in rice and Tone’s® Savory Herb Rice Seasoning. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is fully cooked and fluffy.

Spoon the Savory Herb Rice onto a plate or bowl. Top with the stewed beef and a bit of the cooking broth. Garnish with parsley and enjoy!
