Yield: 2 cups
- A great topping for your favorite pancakes or waffles.
- 1 cup corn syrup, light
- 1 can (8 ounces) crushed pineapple
- 1 mango, chopped (about 1 cup)
- 1/4 cup sliced almonds, toasted
- Ground Nutmeg
- Combine all ingredients in a small saucepan over medium heat.
- Cook about 5 minutes, until syrup comes to a full boil.
- Serve with Coconut Pancakes or other pancake or waffle recipe.
