Easy Blueberry Cobbler Recipe

- A quick but delicious dessert.
Ingredients
- 4 cup fresh OR frozen blueberries
- 2 tbsp corn starch
- 2 tbsp water
- 1 tbsp lemon juice
- 1/4 tsp Pure Almond Extract
- 1/8 tsp Ground Cloves
- 1 tsp baking powder
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1/2 tsp salt
- 1/4 cup butter OR margarine, melted
- 1/2 cup milk
- 2/3 cup sugar
- 1 to 2 tbsp coarse (turbinado) sugar, optional
Directions
- Preheat oven to 400F.
- For Filling: Mix berries, sugar and corn starch in a large bowl.
- Add water, lemon juice, almond extract and cloves, if desired.
- Pour mixture into a greased 8-inch square baking dish.
- Bake 10 minutes, stirring once.
- While filling bakes, prepare Biscuit Topping.
- Combine flour, sugar, baking powder and salt in a small bowl.
- Stir in butter and milk with a fork until soft dough forms. (Do not overmix.)
- Drop spoonfuls of topping onto hot fruit.
- Sprinkle coarse sugar over topping, if desired.
- Return cobbler to oven; bake 25 to 30 minutes or until fruit is bubbly and topping is golden brown.
- Cool at least 30 minutes to allow fruit to thicken.
- Serve warm with ice cream, if desired.
