  • Caramel Sauce

Cake

  • 2 tsp baking soda
  • 2 cup all-purpose flour
  • 1/2 tsp salt
  • 2 tsp Ground Cinnamon
  • 2 cup granulated sugar
  • 1/2 cup corn oil
  • 2 tsp vanilla extract, pure
  • 4 cup finely chopped unpeeled apple
  • 1/2 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp cinnamon, ground

Caramel Sauce

  • 1/2 cup butter OR margarine
  • 1 tsp vanilla extract, pure
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon, ground
  • 1/2 cup brown sugar
  • 2/3 cup evaporated milk

Directions

  1. Preheat oven to 350ºF.

  2. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl.
  3. In a separate mixing bowl, combine eggs,apples, oil and vanilla.
  4. Add mixture to the dry ingredients, and stir just until well mixed.
  5. Batter will be thick.
  6. Pour cake batter into greased 13 x 9-inchpan.
  7. Sprinkle with brown sugar and cinnamon.
  8. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean.
  9. Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat.
  10. Stirring constantly, bring to a boil for 1 minute.
  11. Add cinnamon and vanilla. Cool.
  12. Cut cake and serve with caramel sauce.
  13. If desired, top with ice cream or whipped topping.
