Ingredients

  • 4 cup fresh OR frozen blueberries
  • 2 tbsp corn starch
  • 2 tbsp water
  • 1 tbsp lemon juice
  • 1/4 tsp Pure Almond Extract
  • 1/8 tsp Ground Cloves
  • 1 tsp baking powder
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/4 cup butter OR margarine, melted
  • 1/2 cup milk
  • 2/3 cup sugar
  • 1 to 2 tbsp coarse (turbinado) sugar, optional

Directions

  1. Preheat oven to 400F.
  2. For Filling: Mix berries, sugar and corn starch in a large bowl.
  3. Add water, lemon juice, almond extract and cloves, if desired.
  4. Pour mixture into a greased 8-inch square baking dish.
  5. Bake 10 minutes, stirring once.
  6. While filling bakes, prepare Biscuit Topping.
  7. Combine flour, sugar, baking powder and salt in a small bowl.
  8. Stir in butter and milk with a fork until soft dough forms. (Do not overmix.)
  9. Drop spoonfuls of topping onto hot fruit.
  10. Sprinkle coarse sugar over topping, if desired.
  11. Return cobbler to oven; bake 25 to 30 minutes or until fruit is bubbly and topping is golden brown.
  12. Cool at least 30 minutes to allow fruit to thicken.
  13. Serve warm with ice cream, if desired.
