4 catfish fillets

3 tablespoons melted butter

3 tablespoons Cajun Seasoning Blend

Directions

Heat a cast iron or other heavy skillet over high heat for 10 minutes. Dip fillets in the butter, then sprinkle with seasoning.

Place fillets, two at a time, in the hot skillet. Cook for 2 to 3 minutes per side, until fish flakes easily with a fork and is blackened on the surface.
